Tuna salad

Delicious over lettuce.

TUNA SALAD

  • 2 cans tuna in oil, drained
  • 4 eggs, hard boiled and chopped in big-ish pieces
  • 1 tsp. sugar-free sweet pickle relish
  • ½ cup mayonnaise
  • 1 Tbsp. chives, minced
  • Salt and pepper
  1. Mix everything well.
  2. Chill before serving.

*Can also use cooked, chopped chicken to make this a chicken salad.

Pollo bites

My bad – 1) I’m terrible at saving recipes, and 2) for recipes that I do keep/write down, I started keeping them in Google Docs.  Honestly, I’m only writing here again so that each recipe can have a dedicated URL for importing into MyFitnessPal.

POLLO BITES
My version of an appetizer from BB’s Tex-Orleans.  FYI, for this recipe, I have no idea what the actual ingredient measurements are – I just start with the chicken and go with it.

  • 2 chicken breasts, sliced into strips and flattened (don’t make the strips too narrow, you need enough to roll/fold them over)
  • 6 Tbsp. cream cheese, softened
  • 4 jalapenos, cut into narrow strips
  • 8 slices bacon (more than you think)
  • Salt and pepper
  1. Preheat oven to 400.
  2. S&P both sides of the chicken pieces.
  3. Spread cream cheese on each chicken piece.
  4. Make a line of jalapeno strips in the middle of each chicken piece.
  5. Roll/fold over the chicken pieces so you have a bunch of chicken rolls.
  6. Wrap the chicken rolls tightly in bacon all the way down.
  7. Bake for about 30 minutes until the top of the bacon is crisped up.
  8. Flip each chicken roll over and bake for an additional 5-10 minutes until those bottom sides are crisped up.
  9. Slice into bite-sized pieces.
